This is one of my all time soups.   As you can see from the Ingredients list, there are a lot of things that go into making this wonderful soup.  That being said, time is not one of those things.  When I think of Chili, I think of slow cooking it all day long.  However, with this Italian Chili, from start to finish, you can make this in less than an hour.  And it is also terrific as left overs as long as you follow one simple tip.  Don't mix the noodles into the soup in one large batch.  Rather, cook the soup and noodles separately and when ready to serve, place a heaping load of the noodles into the soup at time of plating. 


Steps:

  1. Brown the ground beef in a large saucepan over medium heat.  Drain most of the fat
  2. In large pot, add onion, carrot, celery, garlic and bacon fat.  Saute for 10 minutes or until onions are translucent.
  3. Add ground beef to the mixture along with all remaining ingredients except pasta.  Simmer for 1 hour
  4. About 50 minutes into the simmering, cook the pasta per the directions on the box.  Cook noodles until pasta is al-dente and drain.  Run cold water over the noodles to stop the cooking process
  5.  Pour soup into a bowl and add desired amount of pasta to taste. (Don't skimp, the pasta will soak up the broth and makes the dish).


Serve with bread-sticks for a meal of its own or serve small portions to accompany other Italian entrees.

1 cup ............ Thin Sliced Celery

2 Tbsp .......... Bacon Fat Drippings

3 Tbsp .......... Minced Garlic

45 oz ............. Diced Tomatoes

23 oz ............. Red Kidney Beans (with Liquid)

23 oz ............. Great Northern Beans (with Liquid)

23 oz ............. Tomato Sauce

18 oz ............. V-8 Juice

1 1/2 Tbsp .. White Vinegar

2 1/2 tsp ...... Salt

1 3/4 tsp ...... Oregano

1 3/4 tsp ...... Basil

3/4 tsp .......... Thyme

1 box .............. Ditalini Pasta

2 3/4 qt ......... Beef Broth
